Quick and Easy Creamy Lemon Oatmeal Bars

Creamy Lemon Oatmeal Bars from Life with Liz Somma

This past Tuesday was the first day of school here in our town in New Jersey.  My son Davey is going into 7th grade. For me it's so hard to believe that he only has two years left in middle school, then off to high school.  It's so bittersweet for me, my kids are growing up!  Creamy Lemon Oatmeal Bars are a delicious, easy bar cookie recipe. The sweetened condensed milk, and lemon flavor are basically the creamy filling. The crust and the crumb topping are the same, so it's an easy dessert to whip up for an after school snack. Enjoy!

Creamy Lemon Oatmeal Bars

  • 1 teaspoon Baking Powder
  • 1-1/3 cup All-purpose Flour
  • 1/2 teaspoon Salt
  • 1 stick (1/2 Cup) Butter, chilled, cut into tiny pieces
  • 1 cup Brown Sugar (lightly Packed)
  • 1 cup Oats
  • 1 can (14 Ounce) Sweetened Condensed Milk
  • 1/2 cup Lemon Juice (I used fresh lemons)
  • Zest Of 1 Lemon

Preheat Oven to 350 degrees
In a large bowl, using two knives or a pastry cutter, combine the butter, sugar,
oats, flour, salt and baking powder until mixture looks crumby or like tiny peas. 
Press half of crumb mixture into the bottom of a greased square pan.
Mix together Sweetened Condensed milk, lemon juice, careful with the seeds, and zest.
Evenly spread the lemon mixture over the bottom of the crust.
Top with the other half of the crumb mixture, but don't press.
Bake for 20 to 25 minutes, or until golden brown.
Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool. Serve this cool!
