Homemade Mac and Cheese 101

Hey everyone welcome back!!!

What a beautiful day we are having here in northwest New Jersey! Finally the humidity and heat broke, and it really feels like an Autumn day! This past Saturday we had my husband's family over.  It was a very hot day, the kids swam in the pool, and played outside, while the adults ate, and sat in the air conditioning. Not a typical family summer get together, but the heat was unbearable! 


I enjoy cooking and entertaining, and love using easy, but delicious recipes.  Mac and Cheese is one of them. I've been making this recipe for at least 20 years now.  It's a Martha Stewart recipe, but I've made it my very own over the years. It's creamy, delicious, and very easy.  You need to make a roux using flour and butter.  Please do not let this very easy and important step intimidate you. Cooking shouldn't be intimidating, but fun and most importantly rewarding! Go ahead and make my Homemade Mac and Cheese, I hope it will be one of those go-to recipes you cook when you have friends and family over too. Enjoy!


Homemade Mac and Cheese 101

Ingredients
  • 6 Tbs butter
  • 1/2 cup flour
  • 5 1/2 cups whole milk or 2% milk
  • 1 lb little shells or elbows pasta
  • 2 tsp salt or more to taste
  • 1 tsp pepper
  • 1 tsp. freshly ground nutmeg
  • 2 1/2 cups shredded cheddar cheese
Instructions

In a large deep pot, melt the 6 Tbs butter, add the flour and mix with a whisk for 1 minute, do not let it burn! Immediately add the milk and constantly whisk, add the salt, pepper, and nutmeg....constantly whisking until it gets thick, it will take about 5 mins or so.......do not walk away or answer the phone, it will burn, keep whisking!!!
When the sauce gets thick, remove from stove and add the cheese...stir....taste it, does it need more salt, pepper?
Cook the pasta, you all now how to cook pasta right? Well if you don't bring a big pot of water up to a boil, and add the pasta, stir it and let cook for about 7 minutes until done. Drain the pasta, add the pasta to the pot of cheesey/milk mixture, stir until all creamy and combined. Spray a large 9x14 casserole dish with non-stick cooking spray, and put the pasta with cheese sauce in the dish, or if your lazy sometimes like me, just serve it right out of the big pot. No need to reheat if you're eating it right away or within 2 hours. Enjoy!
